3 Low Vegetarian Recipes With Apples

These are three of my favourite ways to cook apples:

Apple Crumble

  • 4 large green apples (peeled, cored and thinly sliced)
  • 1 tsp cinnamon
  • 1 cup rolled oats
  • ¼ cup shredded coconut
  • 1 tsp finely grated lemon rind
  • ¼ cup brown sugar
  • ½ cup oat bran
  • ¼ cup pepitas or sunflower seeds
  • ¼ cup roasted almonds or walnuts
  • 2 tbs non-hydrogenated table spread or butter
  1. Preheat oven to 180C/350F. Place apples in base of an ovenproof dish or use 4 individual dishes
  2. Place remaining ingredients in a food processor and combine well. Sprinkle over apples.
  3. Bake for about 30 minutes.
  4. Serve with low fat vanilla yoghurt or low GI icecream. (YUM!)

Kashmiri apple chutney

  • 2 tbs ghee or unsalted butter
  • ½ tsp each of whole cumin, coriander, fennel seeds
  • 6 medium sized tart or green apples (thinly sliced)
  • 1/8 tsp each of ground nutmeg, cinnamon, cardamon
  • ¼ tsp chilli powder
  • 1/3 cup orange juice or lemon or lime
  • 1/8 tsp ground mace (flower of nutmeg) optional

3 Low Vegetarian Recipes With Apples

  1. heat the ghee/butter over medium heat, add the spice seeds and fry until the butter froths or the seeds darken a few shades. Add remaining ingredients, bring to a boil, and stir until the sugar dissolves.
  2. reduce heat to low and stir frequently during the last 10 minutes, until the chutney is thick and glazed.
  3. Serve with Indian dishes, with Coconut Chutney (coconut stirred through thick yoghurt). Or with yoghurt and enjoy anytime.

Cooked Apple with dried fruit

One of the simplest dishes is to cook dried apple with dried fruit such as sultanas, prunes and dates. When you add some cinnamon, grated lemon or orange peel, the flavours come together beautifully. You have the option of adding some chopped nuts or a sprinkle of your favourite seeds such as sunflower or sesame.

Enjoy it for breakfast with ground linseed (giving you an Omega 3 boost), as a snack, or jazz it up for dessert by serving it with a creamy yoghurt or icecream.
