Broccoli Casserole

  • 2 cans cream of mushroom soup
  • 1 can sliced water chestnuts
  • 1 jar cheese spread
  • 1 head broccoli
  • 1 can mushrooms, optional
  • 1 can French fried onions

Wash broccoli; cut into bite-size pieces. Cook slightly and drain. Mix all ingredients, reserving some of the fried onion for the top. Bake at 350 degrees F. for 30 minutes. Can use 1 package of frozen cauliflower and broccoli instead of fresh broccoli.

Broccoli Casserole With Rice

  • 1/2 cube margarine or butter
  • 1/2 cup onion, chopped
  • 1/2 cup celery, chopped
  • 10 oz. pkg. frozen broccoli
  • 8 oz. jar Cheese Whiz
  • 2 cups cooked rice
  • 1 can cream of mushroom soup

Melt the margarine, add in onions and celery. Cook just until soft. Add in broccoli, stir and thaw. Add the soup and cheese. Add rice. Pour all into casserole dish and bake uncovered at 350 degrees F. for 30 minutes. Serves 5.

Cheese Broccoli Casserole

  • 2 pkg. frozen broccoli, cooked and drained
  • 1 can cream of chicken soup
  • 1 cup mayonnaise
  • 1 cup onion, chopped
  • 1 cup grated cheddar cheese
  • 1 egg, beaten

Mix soup, mayonnaise, onion, cheese and egg and then add to the cooked and drained broccoli. Pour into ungreased casserole. Sprinkle with crushed Ritz cracker crumbs and bake at 350 degrees F. for 45 minutes. Note- other items can be used for added flavor. You might try mixing in dried onion soup mix, or cottage cheese or sour cream or crumbled bacon.
