1. Creme’ Fraiche

Pour 8 oz. of heavy cream into glass jar with lid. Add 2 Tbs. of sour cream, or buttermilk, or plain yogurt. Mix well, cover and let stand for 8 hours at room temperature. Refrigerate for 24 hours before serving. Whip before serving. You can add sweetener or vanilla to taste.

For serving on scones. First spread marmalade and then top with Creme’ Fraiche

2. Quick and Easy Scones

  • 2 C flour
  • 1 1/4 C heavy cream
  • 1/2 C sugar
  • 1 Tbs. baking powder
  • 1/4 tsp. salt

Mix all dry ingredients together and add cream. Mix and then pat out on floured cloth into a circle. Cut the circle like a pie, into triangle shaped pieces and place on cookie sheet covered with parchment paper.

Bake at 425 degrees for 10 to 12 minutes

Serve with marmalade and Creme’ Fraiche

One of the pleasures of any tea party is getting to try all of the different sandwiches. Traditionally, sandwiches are cut into small sizes which can be eaten in two bites. Sandwiches are served without the crusts on many different types of breads. I prefer light rye, white or pumpernickel. The bread is more easily cut if it is chilled. To do that place bread in waxed paper and wrap with a wet cloth and place in refrigerator for about 20 minutes.

The bread then can easily be cut into the shapes you desire. The sandwich fillings can be anything you want, but here are a few ideas.White chicken meat with mayonnaise or flavored cream cheese.

Chicken salad with chopped almonds.

Thin sliced ham with English mustard.

Roast Beef with creamed horseradish.

Chopped shrimp with seasoned mayonnaise.

Egg salad and watercress.

Watercress with thinly sliced cheese and mayonnaise.

Grated cheddar cheese and mayonnaise with sliced cucumbers and watercress.

Thinly sliced roast beef with cream cheese and chives or English mustard.

Chopped green olives and mayonnaise.

Chopped green olives, sliced cheese and mayonnaise.

Thinly sliced cucumber and sliced cheddar with chive flavored cream cheese.

Smoked salmon and mayonnaise. or cream cheese.

Flavored cream cheese and watercress.

Serve with flavored cream cheese and leave plain.

Now you can buy cream cheese in various flavors which will enhance your sandwich choices. Experiment until you find the combinations you like. Many sandwich combinations can be made ahead and frozen.
