 Chicken Cacciatore

  • 3 1/2 to 4 lb. chicken, cut up
  • 1/2 cup flour
  • 1/2 cup olive or cooking oil
  • 1 clove of garlic, minced
  • 1 cup finely chopped onion
  • 1 green pepper finely chopped
  • 1 can tomatoes
  • 1 8 oz. can tomato paste
  • 1/4 lb. mushrooms, sliced
  • 2 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 tsp. oregano

Dredge chicken in flour; brown in oil. Add remaining ingredients; simmer for 1 hour. Serve with hot spaghetti and grated Parmesan cheese. Serves 6.

Chicken With Rice

  • 2 cans cream of chicken soup
  • 1 soup can of rice
  • 1 cut-up fryer
  • 1 1/2 soup cans of water
  • 1 pkg. onion soup mix

Combine soup, rice, water, and 1/2 package soup mix. In 9 x 13 inch pan, lay chicken in mixture; salt and pepper. Sprinkle with the other 1/2 package of onion soup mix. Cover and bake at 350 degree F. for 2 hours.

Roast Chicken With Vegetables

  • 4 lb. whole fryer
  • salt and pepper to taste
  • 1 clove garlic, peeled
  • 1 tsp. dried rosemary, divided
  • 1/3 Cup olive oil, divided
  • 4 potatoes, peeled and cut lengthwise into quarters
  • 4 carrots, peeled
  • 4 medium onions, peeled and quartered

Salt and pepper the inside of the chicken. Place garlic clove inside along with a pinch of rosemary. Rub outside of chicken with oil. Place chicken in a 9 x 13 inch baking dish. Toss Vegetables with the remaining oil and arrange around chicken. Sprinkle with salt and pepper and the remaining rosemary. Roast in oven at 375 degrees F. for about 1 1/2 hours. Baste if needed.

No Peek Chicken

  • 1 fryer, cut-up
  • 2 cups minute rice
  • 1 pkg. lipton dry onion soup mix
  • 1 cup cream of celery soup
  • 1 cup cream of mushroom soup
  • 1 cup water

Mix soup, water and rice; set aside. Grease casserole; place chicken in it and pour soup mixture over chicken. Cover tightly with foil and bake at 350 degrees F. for 2 hours. DO NOT PEEK. Serves 4-6.
