4 Vegan Cookie Recipes

Everyone likes cookies.  Scroll down to find a list of vegan cookie recipes. Many of these recipes use vegan margerine, a popular brand is earth balance.  Look for this in your local health food store.

1.) Chocolate Chip Cookies

Part One

  • 1 cup sugar
  • ½ cup brown sugar
  • 1 tsp. salt
  • ¼ cup applesauce
  • 1 tbsp vanilla
  • 1 cup vegan margerine
  • 2 tbsp soy milk or rice milk
Part Two
  • 2¼ cups all purpose flour
  • 2 tsp. baking soda
  • 1½ cups non-dairy chocolate chips

Preheat oven to 375°F.  Combine part one in large mixing bowl and mix with electric beaters for 2 minutes.  Sift in the flour and baking soda, and stir until just combined.  Do not overmix.  Fold in chocolate chips.  Use a tablespoon to measure cookies.  Drop onto lightly greased cookie sheet, and bake for 12-15 minutes until they begin to brown slightly.  Cool on cookie rack and store in airtight container.

2.) VEGAN GINGERBREAD COOKIES

Part One

  • 6½ cups all purpose flour
  • 1 cup brown sugar, lightly packed2
  • ½ tsp. salt
  • 1 tbsp. baking powder.
  • 2 tsp. cinnamon
  • 1 tsp. ground ginger
  • pinch cloves
  • zest from 1 lemon (very finely minced)
Part Two
  • ½ water
  • 2 tbsp. vegetable oil
  • ½ cup margarine
  • 1 tbsp vanila
  • 1 tbsp. maple syrup
  • 1 cup molassas

This recipe makes 30 average size cookies:
Preheat oven to 375°F.  Sift part one into a medium mixing bowl. In seperate large mixing bowl combine part two. Whip with hand mixer until completely combined. Add the dry ingredients into the wet ingredients in 4 parts, mixing between each addition.  Add more water, a tablesoon at a time if needed until you get a nice firm rollable cookie dough.  Mix only until combined.  Do not over mix. Cover cookie dough and place in the fridge for 2 hours to rest.

Roll dough onto a lightly floured surface to a thickness of about
¼ inch.  Use your favorite cookie cutters and cut out cookies of different shapes.  Place on lined baking sheet and bake 12 minutes or until slightly browning on outside.  Cool on wire rack.  Store in air tight container.

Part One

  • 2 cups all purpose flour
  • ½ wholewheat flour
  • 1½ cups icing sugar
  • ½ tsp. salt
  • 1 tbsp. baking powder.
  • 1 tsp. vanilla
  • 4 tbsp. applesauce
Part Two
  • coloured sugar crystals (optional)

This recipe makes 24 cookies:

Preheat oven to 375°F.  Combine all of part one in a large mixing bowl and mix until combined, but do not overmix.  Turn onto a lightly floured board and roll to ¼ inch.  Use your favorite cookie cutters to form the cookies.  Sprinkle with the coloured rock sugar and place on a lightly greased baking sheet, or use parchement paper.  Bake 10 – 12 minutes or until cookies just begin to brown on the outside. Cool on a baking rack and store in a airtight container.

4.) Chewy Chocolate Pecan Cookies

Part One

  • ¾ cup Vegan Margarine
  • 1 cup sugar
  • 2 Tbsp Applesauce
  • 2 Tbsp Soy Milk
  • ¼ Molasses
  • 2 Tbsp Corn Syrup
Part Two
  • 2¼ cups all purpose flour
  • 2 tsp. baking soda
  • ¼ cup cocoa powder

Part Three

  • ¾ cup crushed pecans (or walnuts)

Preheat oven to 375°F.  In a large mixing bowl cream margerine and sugar together and mix for 2 minutes with electric hand mixer. Add the remainder of Part One and mix until well combined.  Sift in Part Two and mix until just combined.  Do not overmix.  Lastly, gently mix in the nuts until evenly combined.  Use a Tablespoon to form a ball of dough and place onto ungreased baking sheet, be sure to leave sufficient space between cookies.  (approx. 2 inches) Bake 10 – 12 minuted  Cookies will be soft when you first remove them but should harden as they cool.  Store in an airtight container.
