  • 2 eggs
  • 2 tsp. vanilla
  • 4 cups sifted flour

  • 2 tsp. cinnamon
  • 1 tsp. nutmeg
  • 1/2 tsp. allspice
  • 2 cups raisins
  • 1 cup chopped nuts

Cream the sugar and shortening; add pumpkin, eggs, vanilla and beat well. Sift together the flour, baking powder, soda, salt and spices. Add to the creamed mixture and mix well. Stir in the raisins and nuts. Drop by rounded teaspoon onto greased cookie sheet. Bake at 350 degrees for 12 to 15 minutes. Can be frosted with vanilla icing.

Pumpkin Nut Bread

  • 2 cups sifted flour
  • 2 tsp. baking powder
  • 1/2 tsp. soda
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1/2 cup milk
  • 2 eggs
  • 1/4 cup softened butter
  • 1 cup chopped pecans
  • 1 cup solid pack pumpkin
  • 1 cup sugar

Sift together flour, baking powder, soda, salt and spices. Combine pumpkin, sugar, milk and eggs in mixing bowl. Add dry ingredients and softened butter and mix until well blended. Stir in nuts. Spread in well greased standard loaf pan. Bake at 350 degree F. for 45 to 55 minutes or until toothpick inserted in center comes out clean. Makes one loaf. Bread freezes well.

  • 20 graham crackers, crushed
  • 1/4 cup butter
  • 1/4 cup sugar

Mix together and press into a pie pan and chill.

Mix together the flour, margarine, 1/4 cup sugar, coconut, and pecans. Press into a 9 x 13 inch glass baking dish, bringing mixture up the sides. Bake at 350 degrees F. for 10 minutes. Mix together the brown sugar, pumpkin, milk, salt, vanilla, eggs, 1/2 cup sugar, cinnamon and ginger. Put into the baked crust and bake at 350 degrees F. for 45 minutes.

  • 1 cup pumpkin, canned or cooked
  • 1/2 cup sugar
  • 2 eggs,separated
  • 2 Tbsp. flour
  • 1/2 tsp. salt
  • 1/2 tsp. cinnamon
  • 1/2 tsp. ginger
  • 1/4 tsp. nutmeg
  • 2 Tbsp. Karo
  • 2 Tbsp. melted butter
  • 1 1/2 cup milk

Mix pumpkin, sugar, salt, spices, flour, and Karo. Beat egg yolks and add with butter and milk. add beaten egg whites last. Pour into one unbaked pastry shell and bake at 400 degrees F. for about ten minutes and then reduce to 350 degrees F. to finish baking.
