Like non-vegan baking recipes it is very important that ingredients be measured accurately. Another tip is to have all ingredients at room temperature before you begin mixing anything.

6 Vegan Baking Recipes

1.) VEGAN CORNBREAD

Part One

  • 1 cup all-purpose flour
  • 2 cups cornmeal
  • 1 tsp. salt
  • 1 tbsp. sugar
  • 3 tsp baking powder.
Part Two
  • 1½ cups soy milk or other nondairy milk
  • ½ cup vegetable stock or apple juice
  • 1½ tbsp malt vinegar
  • 1/3 cup vegetable oil

Preheat oven to 350°F.  Sift part one into a large mixing bowl.  In separate bowl whisk part two together vigorously for 3-5 minutes. Pour part two into the sifted dry ingredients and stir with wooden spoon until well combined.  Do not over mix.  Spray a 9″x13″ baking pan and bake for 35 minutes.  Best served warm.

This cornbread is a perfect to serve with vegan chili or corn chowder!  Also try mixing in a few caramelized onions or
chopped jalapenos into the batter for a yummy variation.

2.) APPLE RAISIN MUFFINS

Part One

  • 2½ cups all-purpose flour
  • ½ cup brown sugar, lightly packed
  • ½ tsp. salt
  • 1½ tbsp. baking powder.
  • 1tsp. cinnamon
Part Two
  • 2¼ cups soy milk or other nondairy milk
  • 4 tbsp vegetable oil
  • 1 tsp apple cider vinegar
  • 2 tbsp vanilla extract
  • 2 tbsp. maple syrup
Part Three

  • 1 apple, diced
  • ½ cup golden organic raisins

Preheat oven to 375°F.  Sift part one into a large mixing bowl.  In separate bowl whisk part two together for 1 minute. Pour part two into the sifted dry ingredients and stir with wooden spoon until just combined, but still lumpy.  Do not over mix.  Lastly pour in apple, and raisins and stir until evenly mixed.  Portion into a muffin tray and bake 20-25 minutes, or until inserted toothpick comes out dry and muffins begin to brown.  Makes 12 muffins.

3.) BLUEBERRY BANANA  MUFFINS

Part One

  • 2½ cup all-purpose flour
  • 2½ tsp. baking powder
  • ½ tbsp. salt
  • 1 cup sugar
Part Two
  • 2 cup soy milk
  •  cup applesauce
  • ½ cup vegetable oil
  • 2 mashed bananas
  • 2 tbsp. maple syrup
  • 2 cups oats

Part Three

  • 2 cups blueberries

Preheat oven to 400°F.  Sift part one into a large mixing bowl.  In separate bowl combine part two and let sit for 15 minutes.  Pour part two into the sifted dry ingredients and stir with wooden spoon until just combined, but still lumpy.  Do not over mix.  Lastly, gently fold in the blueberries until evenly mixed.  Portion into a muffin tray and bake 30-35 minutes minutes, or until inserted toothpick comes out dry and muffins are firm to touch.  Makes 12 muffins.

4.) VEGAN GINGERBREAD COOKIES

Part One

  • 6½ cups all purpose flour
  • 1 cup brown sugar, lightly packed2
  • ½ tsp. salt
  • 1 tbsp. baking powder.
  • 2 tsp. cinnamon
  • 1 tsp. ground ginger
  • pinch cloves
  • zest from 1 lemon (very finely minced)
Part Two
  • ½ water
  • 2 tbsp. vegetable oil
  • ½ cup margarine
  • 1 tbsp vanilla
  • 1 tbsp. maple syrup
  • 1 cup molassas

This recipe makes 30 average size cookies:
Preheat oven to 375°F.  Sift part one into a medium mixing bowl. In separate large mixing bowl combine part two. Whip with hand mixer until completely combined. Add the dry ingredients into the wet ingredients in 4 parts, mixing between each addition.  Add more water, a tablespoon at a time if needed until you get a nice firm rollable cookie dough.  Mix only until combined.  Do not over mix. Cover cookie dough and place in the fridge for 2 hours to rest.

Roll dough onto a lightly floured surface to a thickness of about
¼ inch.  Use your favorite cookie cutters and cut out cookies of different shapes.  Place on lined baking sheet and bake 12 minutes or until slightly browning on outside.  Cool on wire rack.  Store in air tight container.

5.) VEGAN BROWNIES

Part One

  • 2 cups all-purpose flour
  • 1½ tsp. baking powder
  • ½ tbsp. salt
  • 2 cups sugar
  • ¾ cup cocoa powder
Part Two
  • ½ cup soy milk
  • ½ cup water
  • 1 cup vegetable oil
  • 2 tbsp. maple syrup

Preheat oven to 350°F.  Sift part one into a large mixing bowl.  In separate bowl combine part two and whisk gently.  Pour part two into the sifted dry ingredients and stir with wooden spoon until just combined.  Do not over mix.  Pour mixture into a parchment lined and greased 9″x13″ baking pan and bake for 30 – 35 minutes.  Allow to cool and cut into squares.

6.) BUCKWHEAT BISCUITS

Part One

  • 4 cups all purpose flour
  • 2½ cups buckwheat flour
  • 1 tbsp. salt
  • 2 tbsp. + 1 tsp.  baking powder.
  • 2 tbsp white sugar
Part Two
  • 2½ cups soy or other non-dairy milk
  • 6 Tbsp. vegetable oil

Preheat oven to 450°F.  Sift part one into a large mixing bowl.  Create a ‘well’ in the center of the dry ingredients and add part two.  Slowly with a wooden spoon bring the dry ingredients into the center.  Continue to stir with wooden spoon, until mixture forms into a ball.  Turn onto lightly floured surface and kneed lightly for no more than 2 minutes. Allow dough to rest 10 minutes covered with plastic wrap.  Roll dough out to ¾ inch.  Cut with round cookie cutter no larger than 2 inches diameter.  Bake for 13-16 minutes, or until light brown in color.  Allow to cool slightly.  Serve warm.
