Cowboy Oatmeal Cookies

  • 2 cups flour
  • 1 tsp. soda
  • 1/2 tsp. salt
  • 1/2 tsp. baking powder
  • 1 cup shortening
  • 1 cup sugar
  • 1 cup brown sugar
  • 2 eggs
  • 2 cups quick cooking oats
  • 1 cup coconut
  • 1 tsp. vanilla

Cream together sugar and shortening. Add the eggs and beat until light and fluffy. Add dry ingredients, blend. Add vanilla. Bake on greased cookie sheet 10 to 12 minutes in 350 degree F. oven.

  • 3 cups rolled oats
  • 2 cups unsifted flour
  • 1 cup whole wheat flour
  • 2 cups brown sugar
  • 1 1/2 tsp. soda
  • 2 tsp. nutmeg 1 cup butter
  • 1 cup buttermilk
  • 1 cup raisins or other dried fruits or chocolate chips
  • 1 cup nuts

Blend together the oats, flour, sugar, soda, and nutmeg. With a pastry blender cut in the butter and then add the buttermilk. Carefully blend in the fruit or chocolate chips and the nuts. Drop by heaping tablespoons on a lightly greased cookie sheet. Brush the tops lightly with buttermilk. Bake at 375 degrees F. for about 12 minutes.

  • 1 cup seedless raisins
  • 1 cup water
  • 3/4 cup shortening
  • 1 1/2 cup sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 2 1/2 to 3 cups four, unsifted
  • 1/2 tsp. baking powder
  • 1/2 tsp. cloves
  • 1 tsp. each of soda, salt and cinnamon
  • 2 cups rolled oats
  • 1/2 cup chopped nut

Simmer the raisins in the water for 20 to 30 minutes. Drain liquid into a measuring cup and add more water to equal 1/2 cup. Cream together the shortening, sugar, eggs and vanilla. Stir in the raisin water. Add the flour, baking powder, soda, salt and the spices. Blend well and add the oats, raisins and nuts and drop by teaspoonfuls on ungreased baking sheet. Bake at 350 degrees F. until lightly browned, about 8 to 10 minutes.

Monster Oatmeal Cookies

Makes 24 dozen!

  • 12 eggs
  • 4 cups sugar
  • 1 Tbsp. vanilla
  • 2 lbs. brown sugar
  • 1 lb. butter
  • 1 Tbsp. Karo
  • 3 lbs. peanut butter
  • 8 tsp. soda
  • 18 cups quick cooking oats
  • 1 lb. M & M’s
  • l lb. chocolate chips
  • 2 cups chopped nuts
  • *optional 2 cups coconut

In large bowl cream together the eggs, sugar, vanilla, butter and Karo. Add the remaining ingredients and mix well. Drop by heaping tablespoonfuls onto greased cookie sheet and bake at 350 degrees F. 12 to 15 minutes. Don’t overbake. No flour is used in this recipe.

Raspberry Bar Oatmeal Cookie Recipe

  • 1/2 cup butter
  • 1/2 cup light brown sugar
  • 1 cup flour
  • 1/4 tsp. baking soda
  • 1/8 tsp. salt
  • 1 cup rolled oats
  • 3/4 cup raspberry jam

butter one 8 inch pan and line it with buttered aluminum foil. Mix together all ingredients except jam. Press 2 cups of mixture into pan. Spread jam over all. Sprinkle remaining mixture on top of jam and press in lightly. Bake 35-40 minutes at 350 degrees F. Allow to cool before cutting into bars.

Mama’s Chewy Oatmeal Cookie Recipe

Sift Together:

  • 2 cups flour
  • 1 tsp. soda
  • 2 1/2 tsp. baking powder

Mix Together:

  • 1 cup melted margarine
  • 1 cup sugar
  • 1 cup brown sugar
  • 2 eggs, well beaten
  • 1 tsp. vanilla

Add the moist ingredients to the dry ingredients and Mix. Then add:

  • 1 cup cornflakes
  • 2 cups quick oats
  • 1 cup coconut.

Drop by teaspoonfuls on greased cookie sheet and bake at 350 degrees F. for 8-10 minutes.

Favorite No-Bake Chocolate Oatmeal Cookie Recipe

In a heavy sauce pan, mix:

  • 2 cups sugar
  • 1/2 cup milk
  • 1/2 cup butter or margarine
  • 4 Tbsp. cocoa or 1 square baking chocolate

Bring to boil an boil for 1 minute. Remove from heat and add:

  • 1/2 cup peanut butter
  • 3 cups quick cooking oats
  • 1 tsp. vanilla

Let stand a few minutes and then drop by teaspoonfuls onto a cookie sheet covered with waxed paper. Yummy! My family loves these…..

No-Bake Oatmeal Cookie Recipe

  • 2 cups sugar
  • 1/2 cup milk
  • 1 cube butter or margarine
  • 1 cup chunky peanut butter
  • 3-3 1/2 cups quick oats
  • 1 tsp. vanilla
  • 1/2 cup chopped nuts

Bring to a boil sugar, milk and butter. Boil only 1 minute. In a bowl have oats, and chopped nuts. Add the hot mixture and beat well. Add peanut butter and vanilla. Drop on waxed paper. This recipe can be made into bars by putting in cake pan and cutting into squares while still warm.
