An easy and delicious Banana Nut Bread Recipe just for you! I have been making this for many years and every batch tastes as good as the first.

Banana Bread is best made from bananas that are ripe (turning black on the peel). I have found that if I buy my bananas on the weekend, by Thursday or Friday of the following week (6 days), They are ripe enough for the Banana Bread Recipe.

Since some of my children do not like nuts, I will make my loaves half with nuts, half without, and also make my loaves in the mini loaf pans, size 3″ x 5″ x 1 1/2″ deep.

Banana Nut Bread Recipe

  • 1/2 cup butter
  • 1 cup sugar
  • 2 eggs
  • 2 cups flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1 cup mashed banana
  • 1 cup coarsely chopped pecans|

In a large bowl of an electric mixer cream together the butter and sugar. Add the eggs, 1 at a time, beating after each addition. In another bowl combine the flour, salt, and soda. Add this mixture to the butter mixture, alternating with the mashed banana. Stir in the pecans. Pour the batter into a greased and floured 9″ x 5″ x 3″ ;oaf pan. Bake at 350 degrees F. for 55 minutes, or until a cake tester inserted in the center comes out clean. Remove the bread from the oven and cool for 5 minutes in the pan. Remove the loaf from the pan and transfer it to a rack to complete cooling. Makes 1 loaf.
