Avocado Recipes – Baked Tomatoes with Avocado

Oven – Gas 5/190C/375F

  • 1 avocado
  • 4 large tomatoes
  • 1 tbsp lemon juice
  • 1 tsp fresh basil, chopped
  • salt, freshly ground black pepper
  • Olive oil, to grease bottom of dish
  • 250g/9 oz/1 cup grated cheese of your choice

Heat the oven. Cut the tomatoes in half, horizontally. Scoop out the flesh. Prepare the avocado, cut into 1/2″ cubes, place into a large bowl. Sprinkle with the lemon juice, add in the flesh of the tomatoes and the herbs. Season and stir in half the grated cheese. Place the mixture into the 4 tomato cases. Bake in the oven until heated through. Serve at once.

Variation – Substitute the cheese buy drizzling some olive oil or sunflower oil over the tomatoes before baking in the oven. Ideal for those on a dairy free or vegan diet. You can also use “dairy free” cheese which is available from specialist health shops and larger grocers or supermarkets.

Herbs – use dried herbs if fresh are not available. If using dried herbs you will need around half the recommended amount. In this case use 1/2 tsp dried basil. You can of course use a different dried herb or add in more if you prefer.

Time – 15 minutes preparation, 15 minutes baking

Serve- As a starter, light lunch or supper dish with hot bread or garlic bread.
