Bacon Cheese Oven Omelet Recipe

8 slices bacon, chopped
tablespoon butter
1 small onion, chopped
8 large eggs
1/2 cup milk
salt and pepper
2 cups shredded cheese (Cheddar, Monterey Jack, or American)

Preheat oven to 350 degrees. Fry bacon in skillet until crispy. Remove bacon and discard all but 1 tablespoon drippings. Add butter and onion; saute until soft and lightly browned. In bowl beat eggs with milk. Stir in bacon, onions, and 1-1/2 cups of cheese. Season with salt and pepper. Pour into a buttered, shallow casserole. Bake, uncovered, for 30 to 35 minutes until mixture is set. When almost done, sprinkle with remaining 1/2 cup cheese and return to oven until cheese melts. Serves 6.
