Best Loved Beef Stroganoff

2 1/4 lbs. round steak
1/4 cup Olive oil
3 tbsp. butter
1 celery stalk, sliced
1 onion, sliced
1 green pepper, sliced
1/2 lb. mushrooms, sliced
1/3 cup all-purpose flour
1 1/4 cups beef broth
3/4 cup sherry
2 tbsp. Worcestershire sauce
2 tbsp. prepared mustard
1/4 cup tomato paste
1 bay leaf
2 tsp. paprika
1/2 tsp. dried thyme
1/4 tsp. pepper
1 cup sour cream
4 cups cooked egg noodles

Cut steak into bite-sized pieces. Heat oil and butter in a large pot. Brown beef on all sides. Add vegetables and saute until tender. Add flour and stir for 2 minutes. Add beef stock, sherry, Worcestershire sauce, mustard, tomato paste and seasonings. Stir thoroughly. Cover and simmer for about 1 1/4 hours. Add sour cream and mix thoroughly. Pour over noodles to serve. Makes 8 servings.

Orange Broccoli

3 tbsp. orange juice
2 tbsp. butter
1 tbsp. liquid honey
2 tsp. Dijon mustard
1/4 tsp. finely grated orange rind
4 cups broccoli florets
pinch salt
1/4 cup hazelnuts

Put first 5 ingredients into a small pot. Heat and stir on medium heat until butter is melted. Boil gently, without stirring, for about 2 minutes or until slightly thickened.

In a separate pot cook broccoli in water and salt until just tender-crisp. Drain well. Add orange juice mixture. Stir to coat well. Sprinkle with hazelnuts. Stir. Makes 4 servings.
