Brazilian Bean Stew

This is a traditional Brazilian dish. This version contains meat but it can be easily converted into a vegetarian version. If you were to use a pressure cooker instead of hob you would reduce the cooking time to 30 min.

Serves: 4

Ingredients:
2 lb dried black beans
½ lb beef jerky
½ lb salt pork
4 oz chorizo, sliced
1 lb pork rib, cut into sections
2 cloves of garlic, crushed
1 small onion, finely chopped
1 bay leaf
2 tbsp olive oil
1 orange, cut into wedges

Brazilian Bean Stew

Method:

Soak the beans overnight, rinse with cold water. Place them back in the pan put enough water in to cover by 3 inches. Place on a medium heat, place the lid on and cook for 1 hour. (Top up with water if needed). Meanwhile, sauté the onions and garlic in the olive oil until tender. At this point add the ribs, salt pork, ribs and chorizo, bay leaf and cook for a further hour.

Serve with boiled white rice, and wedges of orange.
