Cherry And Walnut Cake Recipe

Ingredients
6 oz butter
6 oz caster sugar
3 eggs
8 oz self-raising flour
pinch of salt
4 oz glace cherries (halved)
2 oz walnuts (shelled and chopped)
1-2 tablespoons milk
7-inch diameter cake tin

Method
Prepare cake tin and set the oven at 350° F or Mark 4.
Cream the butter until soft in a bowl, add the sugar and continue beating until the mixture is light. Whisk the eggs and beat them in a little at a time. Sift the flour with the salt and mix 2 tablespoons with the prepared cherries and walnuts. Fold in the flour one-third at a time, adding the cherries, walnuts and milk at the end.
Turn into the prepared tin and bake in the pre-set oven for 1-1¼ hours. Cake is ready when a trussing needle or fine skewer comes away clean.
