Tofu has a very non describable flavour; therefore it lends itself to being marinated or deep fried.

Marinated Tofu with Stir Fried Vegetables

Serves: 4

Ingredients:
1 packet (225g) firm tofu, chopped into bite sized square
1 head of broccoli, broken into florets
100g mange tout
1 sml red onion, finely sliced
1 large clove of garlic, finely sliced
1 tbsp groundnut oil
1 tbsp toasted sesame seeds

For the marinade:
2 tbsp dark soy sauce
2 tbsp mirin
2 tbsp hoisin sauce
1 tbsp chilli sauce
1 tbsp sesame oil

Method:
Preheat the oven to 200C. Place the marinade ingredients in a bowl, mix together. Place the pieces of tofu on a baking sheet, and brush them with 2/3 of the marinade mixture. Place the tray in a hot oven and turn the pieces of tofu after 10 min. Brush with a little more marinade and return to the oven for a further 10 min. When cooked remove from the oven until needed. Heat the groundnut oil in a wok, and when hot add the onions and garlic to the wok. Stir fry for 2 min until slightly softened. Next add the broccoli, mange tout and the remaining marinade and stir fry for a further 3 – 4 min or until the vegetables are cooked but still crunchy. Add the tofu and mix through, Place in your chosen serving bowl, sprinkle with the sesame seeds and serve immediately.
