Chinese Cuisine – Red Roasted Pork

When you are making this pork dish you will capture the aromatic flavours well known to Chinese cuisine.

Difficulty rating: Easy

Serves: 4 – 6

1 kg Pork loin (this will probably mean to pieces)
6 tbsp dark soy sauce
3 tbsp runny honey
1 tsp Chinese five spice
2 star anise
1 tsp ground cinnamon
2 tbsp sherry
1 clove of garlic, crushed
2 “ piece of ginger, peeled and grated

Place all the ingredients except the pork in a roasting dish and mix together. Place the pork in the dish and brush with the marinade ingredients. Place the pork in the fridge for at least 3 hours and preferably overnight. Preheat the oven to 200C. Cover the roasting dish in foil and cook for 45 – 50 min, basting with the marinade half way through. Pork loin usually takes 25 min per 500g so check that it is cooked but piercing with a sharp knife. If the juices run clear then the pork is ready, if not, return to the oven for a further 5 min.

Remove from the oven and set aside for 5 min to allow the pork to rest. Carve into 4mm disc’s and pour over any remaining cooking juices.
