Cider And Nut Cake Recipe

4 oz butter
4 oz caster sugar
2 eggs (well beaten)
1 ½ oz walnuts (chopped)
8 oz plain flour
1 teaspoon bicarbonate of soda
½ nutmeg (grated)
1 teacup cider

For filling
2 oz butter
3 oz dates (stoned and chopped) 2 tablespoons honey squeeze of lemon juice
Shallow 7-inch diameter cake tin

Set oven at 375°F or Mark 5.
To prepare cake : beat butter and sugar to a thick cream ; add eggs and walnuts, then add half of the flour, sifted with the soda and nutmeg. Beat cider to a really good froth, pour it over this mixture and mix thoroughly. Stir in the remainder of the flour, turn into well-greased tin and bake in pre-set hot oven for 45 minutes.

Meanwhile make the filling : cream butter well and add dates, honey and lemon juice.
When cake has cooled, split in 3 and sandwich with filling.
