Coconut Sugar Free Cake Recipe
Ingredients

2 2/3 c. cake flour (sifted) 625 mL
¼ t. salt 1 mL
2 t. baking powder 10 mL
½ c. solid shortening (soft) 125 mL
3 T. granulated sugar replacement 45 mL
2 eggs 2
1 t. vanilla extract 5 mL
1 ½ c. unsweetened coconut (flaked) 375 mL

Method
Sift cake flour, salt and baking powder together. Beat shortening and sugar replacement until creamy and then beat in eggs and vanilla. Add flour mixture and coconut, stirring until well blended. Drop by teaspoonfuls onto lightly greased cookie sheets; press slightly with bottom of floured glass or tumbler.

Bake at 375 °F (190 °C) for 12 minutes, or until done.
