Just like other parts of the world, there are different approaches to prepare salmon recipes in a culturally rich country like Portugal. Salmon is truly a versatile, nutritious fish which can be cooked as steaks or fillets or if you prefer, the whole fish, using a variety of cooking methods like baking, roasting, grilling, poaching, barbecuing, steaming, broiling, smoking, curing, etc. This can result in unique tastes from delicious salmon recipes and forgive me if I’m bias but the one I enjoy the most is a tasty Portuguese salmon dish.

Pickled Salmon with Port Wine

Ingredients

Salmon: skinned… boned and cut into 1 to 2 in (2.5cm to 5cm) pieces, 1/2 cup of white Port wine, pickling salt, 1/2 gallon (2 litres) of water, white vinegar, 1 and 1/2 table spoon of allspice, 1 tea spoon of mustard seed, 1/2 cup of sugar, 1/4 tea spoon of ginger, 2 cups of white vinegar, white sliced onion, 1 sliced lemon.

Preparation

Cover salmon in brine (3/4 cup of pickling salt to 1/2 gallon/2 litres of water). Refrigerate twenty four hours. Then drain. Cover salmon with white vinegar for twenty four hours. Then drain again. In a large mixing bowl, combine allspice, mustard seed, sugar, ginger and vinegar. Mix until well blended. Stir into stockpot. Simmer mixture until sugar melts. Cool and add the Portuguese Port wine. Put drained fish in jars and alternate a layer of fish, white onion and lemon slices. Pour pickling mixture over fish. Refrigerate for ten days.
