Celery with Rice (Aipo com Arroz)

Ingredients

2 stalks of sliced celery, 1 chopped small onion, 1/4 cup of butter or margarine, 2 cups water, 1 cup of uncooked rice, 2 tea spoons of instant chicken bouillon, 2 tea spoons of finely shredded lemon peel, 1/2 tea spoon of salt, 1/4 tea spoon of dry mustard, 1/8 tea spoon of red pepper sauce, 2 table spoons of snipped parsley.

Preparation

Cook and stir onion and garlic in butter in saucepan until onion is tender. Stir in remaining ingredients except parsley. Heat to boiling, stirring once or twice. Reduce heat. Cover and simmer 14 minutes without lifting cover or stirring. Remove from heat. Stir in parsley lightly with fork, cover and let steam 5 to 10 minutes.

Red Pepper Spread (Pasta de Pimentao)

Ingredients

6 large or 8 medium red bell peppers (scrubbed, seeded, and slivered), 1 table spoon of salt, 1 tea spoon of freshly ground black pepper, 2 table spoons of tomato paste, 2 table spoons of olive oil, 2 crushed garlic cloves.

Preparation

In an oven-proof pan, spread the pepper slivers, add the salt and pepper, and cover lightly. Let stand at room temperature for 8 to 10 hours. Remove the cover, add the tomato paste, and roast at about 250C (480F) for at least one hour, stirring often. Remove from oven and puree in a food processor while adding oil slowly along with crushed garlic. Cool and serve.
