I’ve eaten vegetarian and vegan on and off for over a decade. I love to cook and to create passionate, flavorful food.In the last year, I’ve been introduced to a diet incorporating all raw, all organic, fresh ingredients.


Out went the pasta, rice, breads, processed foods. In flowed reams of greens, nuts, seeds, avocado, sauerkraut, nut butters, veggie patties, fruits, muesli…Vitality!

I lost 20lbs in under a month. I’m now at my ideal weight and maintaining it easily without fluctuation, without binge-purge cycles, without hunger, or should I say “craving”, you know, the meaningless, harmful, in-between eating.

I feel so FED on this food, I feel the ENERGY of unprocessed, live food. The energy taps you immediately, viscerally…it’s so good, cravings are easily overcome, easily replaced with vitalizing options and full flavor. It’s so easy and convenient to prepare when you learn the language of the raw kitchen.

Cleansing Broccoli Soup

This delicious soup is lightly cooked (blanched) to allow the cell wall of the broccoli to break down and unleash its nutrients. Its a great soup for the colder months and whenever you need to clean your internal house.

  • 1 broccoli head
  • 1 glove garlic, diced
  • 1/2 tsp cayenne pepper
  • 1 tsp sea salt
  • 1 tsp raw honey or agave nectar
  • 1 tsp ginger, finely chopped
  • 1/4 of a lemon, juiced
  • 2 TBS Nama Shoyu (a brand of raw soy sauce)
  • 2 TBS tahini or sesame oil

Bring water to a boil. Turn off water. Add ingredients. Eat.

Serves 1

Zucchini Vermicelli

This recipe requires a Spiral Slicer, aka Saladacco. It’s an inexpensive tool ($30) that’s easy to clean and will be invaluable if you’re a pasta lover.

  • 1/2 of a zucchini
  • 1/2 glove garlic, diced
  • 1 TBS Italian seasoning
  • 1/8 tsp cayenne pepper
  • 1 fresh tomato or 1/4 cup sun-dried tomatoes, diced
  • 1 tsp balsamic vinegar
  • 2 TBS cold-pressed organic olive oil
  • 1/4 cup ripe avocado, diced chunky
  • pinch of sea salt
  • handful of chopped greens (kale, spinach, chard, dandelion)

Cut the zucchini in half to fit on the head of the Spiral Slicer. Make sure it is set to make strings, not chips. Rotate the handle and in less than a minute, you’ve made the pasta!

Put the pasta in a bowl, add remaining ingredients, toss with a fork and eat.

Optional garnishes: raw goat cheese, sauerkraut, spouted beans or nuts.

Raw Chocolate “Cheesecake”

You’ll never miss a sweet treat on raw. If you have a sweet tooth, pack this in a small container to carry with you and your sweet side will always be satisfied.

  • 1/2 pint raw cashew butter
  • 2 TBS raw cacao powder
  • 2-3 TBS raw honey or agave
  • 1/2 tsp cinnamon (optional)
  • 1/2 tsp sea salt
  • 1/4 tsp cayenne(optional)
  • 1/4 cup oats (optional)

Mix ingredients briskly in a bowl. Once everything is barely mixed together, stop. It’s ready. Serve with fresh diced fruit as a topping. Voila! Perfection!
