Hot Fudge Pudding

  • 1 cup sifted flour
  • 2 tsp. baking powder
  • 1/4 tsp. salt
  • 3/4 cup sugar
  • 2 Tbsp. cocoa
  • 1/2 cup milk
  • 2 Tbsp. shortening
  • 1 cup chopped nuts
  • 1 cup brown sugar
  • 1/4 cup cocoa
  • 1 3/4 cup hot water

Sift together flour, baking powder, salt, sugar and 2 Tbsp. cocoa. Stir in milk and shortening. Blend in nuts. Spread in square 9x9x1 inch pan. Sprinkle with mixture of brown sugar and 1/4 cup cocoa. Pour hot water over entire batter. Bake at 350 degrees for 45 minutes. Very, Very good!

Old Fashioned Bread Pudding

  • 6 slices raisin bread
  • 2 cups milk
  • 2 Tbsp. butter or margarine
  • 2 eggs
  • 1/4 cup sugar
  • 2 tsp. vanilla
  • 1/4 tsp. salt
  • Nutmeg or cinnamon sugar

Slice the raisin bread into 3/4 inch pieces. Place in shallow, buttered 1 qt. baking dish. Heat the milk and butter until hot and the butter is melted. Do not boil. Beat eggs with sugar, vanilla and salt. Add hot milk mixture, stirring constantly. Pour over bread. Allow to stand 5 minutes. Sprinkle with the cinnamon sugar or nutmeg. Set baking dish in pan with hot water to half the depth of dish. Bake uncovered at 350 degrees F. about 50 minutes or until pudding is set. Serves 4 to 6.

Favorite Apple Pudding with Sauce

  • 1 cup sugar
  • 1/4 cup shortening
  • 1 cup flour
  • 1 tsp. soda
  • 1 tsp. salt
  • 1/2 tsp. nutmeg
  • 1/2 tsp. cinnamon
  • 1 egg, unbeaten
  • 1/2 tsp. vanilla
  • 1 1/2 cup peeled, chopped apples
  • 1/2 cup milk

Mix all ingredients and bake at 325 degrees F. for 40 minutes. Serve warm with sauce.

Sauce

  • 1/2 cup sugar
  • 2 Tbsp. cornstarch
  • 1 cup water
  • 2 Tbsp. butter
  • 1/2 tsp. vanilla

Blend the butter, cornstarch and sugar together. Add water, let cook 5 minutes. Add vanilla. Pour over pudding and serve.

Favorite Apple Pudding

  • 1 cup sugar
  • 1/4 cup margarine
  • 1/4 tsp. salt
  • 1/2 tsp. nutmeg
  • 1/2 tsp. cinnamon
  • 1 cup flour
  • 1 tsp. soda
  • 1 egg
  • 3 medium apples, ground or grated.

Beat sugar, margarine and egg. Sift dry ingredients and add to mixture; add apples. Pour into greased muffin tins and fill 3/4 full. Bake at 375 degrees F. for 25 minutes.

Sauce

  • 1 cup sugar
  • 1/2 cup butter
  • 1/2 cup cream
  • 1 1/2 tsp. vanilla or rum flavoring

Heat in double boiler over hot water, stir, pour over hot muffins. Serves 10.

Lemon Pudding Cake

The sauce goes to the bottom and the cake rises to top!

  • 1/4 cup flour
  • 1 cup sugar
  • 1/4 tsp. salt
  • 1 1/2 tsp. grated lemon rind
  • 1/4 cup lemon juice
  • 2 egg yolks, well beaten
  • 1 cup milk
  • 2 egg whites,stiffly beaten

Sift flour, sugar, and salt into bowl. Stir in the lemon rind, lemon juice, egg yolks and milk. Fold in beaten egg whites. Pour into 1 qt. casserole or into 6 custard cups.. Set in pan of water 1 inch deep. Bake at 350 degrees F. for 50 minutes. Serve either warm or cold.

Old Fashioned Rice Pudding

  • 1 qt. milk
  • 4 Tbsp. sugar
  • 3 Tbsp. uncooked rice
  • Dash of salt and nutmeg

Mix until sugar is dissolved. Pour into buttered shallow baking dish. Sprinkle top with nutmeg and bake at 350 degrees F. for 2 hours. At first stir a few times as rice swells. The top should be browned and the rice tender and the milk thick and creamy when finished baking.
