Tuna Fish Steak (Bife de Atum)

800g (1.8 lb) of cleaned fresh tuna, 200g (7 oz) of onions, 60g (2 oz) of butter, 2 dl (7 oz) of cooking oil, 2 cloves of garlic, 1 bunch of parsley, 1 kg (2.2 lb) of potatoes, 1 bay leaf, white pepper and salt to taste, white wine to taste.


Remove the guts and bones of the tuna. Cut the fish into steaks. Place them on a tray. Season with salt, white pepper, peeled and chopped garlic and a little white wine. Peel the onions and cut them up into rings. Place the butter in an earthenware frying pan and put it on the flame. Warm up the butter and then add the chopped garlic, onions and bay leaf. Add the steaks, taking care to turn them over to cook them on both sides and to stir the onions. Serve in the frying pan itself, accompanied by potatos fried in cooking oil in a separate vessel and sprinkled with chopped parsley. If an earthenware frying pan is not available, use a copper one or some other vessel.

Stewed Tuna Fish (Atum Cozido)


800g (1.8 lb) of cleaned, fresh tuna fish, 100g (3 and 1/2 oz) of onions, 400g (a bit less than 1 lb) of fresh tomatoes, 1 dl (3.4 oz) of olive oil, 2 cloves, 1 bunch of coriander, 1 dl (3.4 oz) of white wine, 600g (1.3 lb) of potatoes, salt and pepper to taste,


Prepare the tuna fish, clean away all the blood and wash it in cold water. Peel and slice the onions into rings. Take the stems off the tomatoes, scald the latter and peel and deseed them. Dice the tomatoes. Place the onions, tomatoes, cloves and bunch of coriander in a pan and put it on the flame. Season with salt and pepper. Fry for a few minutes. Slice up the fish and add it to the pan. Add the white wine. Cover the pan and cook in the oven. Meanwhile, in another pan, boil the potatoes in their jackets after having washed them carefully. Peel the potatoes when they are boiled and brown them in a frying-pan with olive oil. Take the pan out of the oven and correct the seasonings. Serve garnished with the potatoes and sprinkled with chopped coriander. The potatoes should be small ones, if available. Enjoy this tuna recipe.
