Meatloaf

  • 2 lbs. ground beef
  • 1 pkg. McCormick’s Meatloaf Mix
  • 2 eggs
  • 10 or 12 crackers finely crushed (to make crumbs)
  • 1 medium onion (diced)
  • 1 can of diced tomatoes with mushrooms and green peppers
  • Shredded Cheese (whichever kind you like)

Mix together ground beef, meatloaf mix, cracker crumbs, onions, and tomatoes. Bake at 350 degrees for 30 to 45 minutes until brown. Drain any grease and sprinkle cheese over top of meatloaf and bake about 15 minutes more or until sure that the meatloaf is done.

Everybody who has ever tried this has always liked it, even people who don’t like meatloaf like it.

Another way to do this is use the recipe from above and place some meat mixture into each section of a muffin pan, pressing mixture up onto the sides to make a dip in the meat. Fill hole with shredded cheese and add more meat mixture on top to fill the muffin cup and then seal meat together. Bake until done.

Easy Peanut Butter Cookies

  • 1 cup peanut butter
  • 1 cup sugar
  • 1 egg

Mix and roll into balls. Place on ungreased cookie sheet. Dip fork into flour (some use sugar) and press into dough ball with a crisscross pattern. Bake at 375 degrees F. for 8-10 minutes or until lightly brown. Don’t over cook. Let cool before removing from cookie sheet (very important). Enjoy!

Mud Pie

  • 1 baked Chocolate Cookie Crumb Crust (see below for recipe)
  • 6 cups or 3 pints chocolate ice cream, softened
  • 1 cup ready-made fudge topping
  • 4 cups whipped cream
  • 3/4 cup crushed chocolate cookies or chocolate graham crackers

Fill your baked, cooled pie shell halfway with half of the chocolate ice cream and freeze for 30 minutes. Spread the fudge topping over the ice cream and freeze for another 15 minutes. Top wih the remaining ice cream, then the whipped cream and finally the cookie crumbs. Freeze for at least 3 hours.
Chocolate Cookie Crumb Recipe:

  • 1 1/2 cups crumbs from plain chocolate cookies(use a processor or rolling pin)
  • 2 Tbs. powdered sugar
  • 6 Tbs. unsalted butter, melted

Mix the cookie crumbs, sugar and butter in a bowl until thoroughly combined. Distribute the mixture evenly around pie pan. Press it against the pan, the bottom first then the sides. Bake at 350 degrees F. for 10 minutes. Cool and add filling. Serves 8-10

Scalloped Corn

  • 1 can corn
  • 1 pkg. of crackers (crumbled)
  • 1 pkg of sharp cheddar cheese (cut into slices)
  • 1 cup of milk

Put crackers on the bottom, then corn, then cheese. Repeat. Add milk over all. Bake at 350 degrees F. for about 25-30 minutes or until brown and bubbly.
