French Cuisine – Chicken En Papillote

This recipe sounds more complicated that it is! Basically you fill a parcel with chicken breasts, a little stock and vegetables, seal up and bake / steam in the oven. You can either remove the contents from the parcel and put on the plate to serve or just take the parcels to the table. The choice is yours!

Ingredients:
2 chicken breasts
1 oz red onion, cut into strips
2 cloves of garlic, crushed
2 pieces of smoked back bacon, cut into thin strips
2 oz mushrooms
2 oz dried mushrooms, soaked in 3 tbsp boiling water
2 tbsp white wine

Method:
Cut off two pieces of foil large 1’ x 1’ so that the ingredients can be accommodated comfortably. Preheat the oven to 200C. Divide the onion between in piece of foil and place in the middle. Place the chicken breasts on top and scatter with the soaked and fresh mushrooms (reserve the liquid from the soaked mushrooms) garlic and bacon. Cover the chicken securely in the foil to form a parcel. I start by folding the foil in half with the chicken in the middle and then carefully fold the foil over to form a secure package. Leave a little gap at one end and pour in the liquid from the mushrooms and the wine equally between the two parcels. Secure. Place on a baking sheet and place on the middle shelf in the oven for 25 – 30 min.
