This is a versatile vegetarian recipe, which can either be served as the main part of a dish or as an accompaniment. The quantities here will serve 4 as a main course.

1lb courgettes, sliced
1 aubergine, chopped into 1” pieces
1 green pepper, chopped into 1 “ pieces
1 red pepper, chopped into 1 “ pieces
2 onions, roughly chopped
2 cloves of garlic, finely chopped
1 tin of chopped tomatoes
150g vegetable stock
1 tsp mixed herbs (oregano, basil, parsley)
½ tsp fennel seeds
pinch of sugar
Salt and pepper for seasoning
2 tbsp olive oil
1 tbsp tomato puree
pinch of saffron

Heat the oil in a pan before adding the garlic and onions, sweat over a low heat for 10 min. Add the tomato puree, fennel seeds and mixed herbs and stir through before adding the remaining vegetables. Coat in the mixture before adding the stock, saffron and tinned tomatoes. Simmer for 15 – 20 min, season and serve with fresh crusty bread.
