French Cuisine – Salad Nicoise Recipe

This is a traditional Provencal salad recipe. This is a wonderful summer lunch dish!

Serves: 4

8 oz French beans
1 lb new potatoes, cut into chunks, cooked in salted water and cooled
4 hard boiled eggs, quartered
4 “ piece of cucumber, cut lengthways with the seeds scooped out and chopped up
4 ripe plum tomatoes, quartered
6 anchovy fillets
2 cans of tuna in brine, drained and flaked
4 oz black olives
1 small Cos lettuce, ripped into bite sized pieces

For the dressing:
2 tbsp olive oil
1 tsp white wine vinegar
2 tbsp chopped herbs, such as tarragon, chives and basil
1 tsp Dijon mustard
1 small clove garlic, crushed

To make the dressing, add all the ingredients together and whisk until fully combined. Cook the French beans in boiling water for 5 min until tender. Drain; keep in the colander with a steady stream of cold water until the beans are cold. (This stops them from carrying on cooking and becoming too soft). Assemble all the ingredients on a large platter, arranging the anchovies on the top and sprinkle over the flaked tuna.

Pour over the dressing and serve with crusty bread.
