Gingerbread Recipe – This gingerbread has a nice spongy texture and is cut into squares for serving.


Gingerbread Recipe
4 oz butter
8 oz golden syrup
3 oz granulated sugar
1 tablespoon orange marmalade
¼ pint milk
4 oz self-raising flour
pinch of salt
1 teaspoon ground ginger
1 teaspoon mixed spice
½ teaspoon bicarbonate of soda
4 oz wholemeal flour
2 small eggs (well beaten)
8-inch square cake tin

Prepare tin and set the oven at 325°F or Mark 3.
Heat the butter, syrup, sugar, marmalade and milk together in a saucepan and stir gently until the sugar dissolves. Allow the mixture to cool a little. Meanwhile sift the self-raising flour with the salt, spices and soda into a mixing bowl, add the wholemeal flour and then mix together.
Add the butter and syrup mixture to the beaten eggs and then pour into the dry ingredients. Stir with a wooden spoon until a smooth batter is formed, then pour into the prepared tin and bake in pre-set oven for about 1½ hours. Gingerbread is ready when pressed with fingertips and it springs back into place.
