Greek Cuisine – Greek Salad Recipe

A fresh salad recipe that is great enjoyed as a meal on its own or as an accompaniment to grilled fish.

Serves: 4

Ingredients:

For the salad:
4 plum tomatoes
3 inch piece of cucumber
12 black pitted olives
½ red onion, finely sliced
8oz block of feta cheese
For the dressing:

1 tsp dried oregano
15ml extra virgin olive oil
2 tbsp lemon juice
pinch of: salt, pepper, sugar
1 sml clove of garlic, crushed

Method:
Roughly chop the tomatoes and cucumber (scoop out the seeds from the cucumber prior to chopping to reduce moisture). Add to a bowl with the olives, and onions. Crumble to feta cheese into chunks and add.Mix the dressing ingredients together and pour over the salad. Mix through so that all the ingredients are coated.
