Greek Cuisine – Grilled Halloumi, Tomato and Mushroom Tower

Halloumi cheese tastes great grilled and this simple tower is impressive as a vegetarian starter or light lunch.

Difficulty rating: Easy

Serves: 4

Ingredients:
1 x 225g block of halloumi cheese, cut into 4 slices
4 large field mushrooms
1 beef tomato, cut into 4 slices
1 clove of garlic, crushed
2 tbsp olive oil
1 tsp fresh thyme

Method:
Turn the mushrooms upside down and drizzle 1 tbsp of the olive oil over also divide the garlic over the 4 mushrooms. Place under a hot grill for 3 min, remove from the grill and place a slice of the tomato on each mushroom and return to the grill for a further 2 min. Remove again from the grill and place a slice of the halloumi cheese on top of each. Then, divide the remaining oil and thyme over the top and return to the grill for a further 3 min or until the cheese starts to colour.

Serve immediately.
