Cypriot Cuisine – Marinated Halloumi Cheese

This is a great vegetarian accompaniment with salads or at a BBQ.

Serves: 4

Ingredients:
200g block of Halloumi cheese
1 small clove of garlic, crushed
Pinch chilli flakes
1 tsp lemon juice
1 tbsp fresh thyme
Splash of Balsamic vinegar
2 tbsp olive oil

Cypriot Cuisine   Marinated Halloumi Cheese

Method:
Slice the cheese into approx 8mm slices. Mix there remaining ingredients together and pour over the cheese. Marinade for at least an hour in the fridge. Grill or Barbeque for 2 min on each side or until golden.

Serve immediately.
