Honey Cake Recipe – delicious and sweet. Often eaten at Jewish New Year celebrations. You don’t need to be Jewish to enjoy it though Honey Cake Recipe

Ingredients

Honey Cake Recipe
½ Ib honey
4 fl oz black coffee
1 tablespoon brandy
2 eggs
4 oz soft brown sugar
2 tablespoons oil
7 oz plain flour
3 teaspoons baking powder
1 teaspoon bicarbonate of soda
½ teaspoon cinnamon
½ teaspoon ginger
½ teaspoon mixed spice
½ teaspoon grated nutmeg
1 oz almonds (blanched and chopped)
1 oz candied peel (chopped)
½ oz raisins (chopped)
½ oz sultanas (chopped)
½ oz dates (chopped)
Two loaf tins about 7½ by 3½ inches

Method
Set oven at 325°F or Mark 3. Line tins with greaseproof paper.
Mix honey and coffee in a small pan and bring to the boil. Add brandy, then allow to cool. Beat eggs lightly in a mixing bowl and stir in the sugar and oil.

Sift the dry ingredients and mix in nuts and fruit. Stir flour and honey mixtures alternately into the egg mixture until the flour is combined. Quickly divide mixture between tins.

Bake in the pre-set oven for 30 minutes, then reduce heat to 300°F or Mark 2 and cook for 40-45 minutes more. The cake is done when it springs back immediately at the light touch of a finger.
Seal in an airtight tin and leave for two days before cutting.
