PONZU SAUCE is a very lemon/sweet flavor sauce good for sashimi and nigiri.

  • -1/4 cup mirin (sweet rice wine)
  • -1/2 cup rice vinegar
  • -1/2 cup fresh squeeze lemon juice
  • -1 cup soy sauce
  • -1 cup bonito fish flakes

Mix mirin, vinegar, soy sauce, lemon juice, bonito flakes in a saucepan bring to a boil over medium heat.

Remove from the heat and let cool.

Pour the sauce through a strainer into a bowl to discard the bonito flakes.

Add lemon juice for more flavor than store in refrigerator for up to 1 week before use.
