Hungarian Cuisine – Paprika Chicken Recipe

Paprika is a commonly used spice in Hungarian cooking. There are many types of paprika used in Hungarian cooking – just use whatever you can get hold of.

4 – 6 chicken pieces
1 onion, chopped
½ oz paprika
50ml chicken stock
2 green peppers, chopped
3 fresh tomatoes, roughly chopped
100 ml sour cream
4 oz lard

Heat the lard in a pan over a medium heat. Once melted add the onions and cook for 6 – 8 min until golden. Reduce the heat and add the paprika and stir in followed by the chicken pieces. Combine in the onion and paprika and cook on all sides until browned. Add the chicken stock, cover and allow to cook for about 20 min. Remove the lid and add the peppers and tomatoes. Allow to simmer for a further 10 min so that the meat is tender and cooked. Remove from the heat. Pour in the cream and stir in. Serve with boiled potatoes.
