This recipe is an Indian vegetarian starter. Any vegetables can be used; the vegetables in the recipe are merely a suggestion. Top Tip: Be careful when using oil. It is important that the vegetables are dry.

Ingredients:
4oz Broccoli florets, small
1 Onion, thinly sliced into rings
1 Potato, thinly sliced
4oz Cauliflower florets, small
6oz Flour
1 tsp Garam Masala
1 tsp Salt
½ tsp Chilli powder
1 tsp Cumin seeds
7 fl. oz Water
2 Pt Vegetable Oil

Method:
Blanch the broccoli and cauliflower for about 4 minutes. Drain and pat dry with kitchen towel. Place the flour, chilli, garam masala, cumin seeds and salt in a bowl and mix. Create a well in the centre, add the water, mix thoroughly; folding at first until the mixture becomes a batter. Heat the oil to 190˚C. (A good way to tell if it’s ready is to place a cube of bread in it; if it browns in 30 seconds or so…it’s ready!) Dip the vegetables in the batter mixture, and then carefully place in the hot oil. When golden brown remove and place on kitchen towel to absorb the excess oil. Cook in batches and serve.
