This section shows you how, with a small selection of spices, creating indian vegetarian recipes is easy. Just have your pantry stocked with the necessary ingredients, and spend some time chopping and stirring. Once you’ve cooked one or two dishes, and experimented with some of the spices, you’ll be able to create your own spicy, aromatic meals.

In Indian cooking, most meat and legume dishes are cooked slowly. Here the emphasis is on creating meals in a much shorter time. This is easy for meals just using vegetables. For meals with legumes, we’ll be using quick cooking red lentils and whole green lentils, as well as canned chickpeas. The level of fat is kept low.

Just what is Indian cooking? Curries are common to Thai cooking, spices used in Indian cooking are common to many other cuisines including those from South American, and the Middle East.

Using the recipes here, a 2 course menu could consist of:

  • Ginger Cauliflower Soup
  • Spinach and Eggplant with Chickpea
  • Plain basmati rice or Spicy Rice and Peas with Almonds
  • Yoghurt

For 4 or more people, have 1 course with a selection of dishes:

  • Red lentils
  • Pumpkin and Pea Curry
  • Cauliflower Curry
  • Plain basmati rice
  • Yoghurt (and add grated cucumber)
  • Green salad
