My mum made this recipe recently as an alternative to chips and recommended it as a different alternative to a side accompaniment.

Ingredients:
1 large baking potato
2 tbsp pesto sauce
1 tbsp parmesan cheese, grated

Method:
Pierce the potato several times with a sharp knife. Cook in the microwave for approximately 8 min (or until soft in the middle when you put a skewer through it). Whilst this is cooking preheat your oven to 200C. When the potato is cooked through, cut it into wedges and place it an oven proof dish. Baste the potato with the pesto and cook in the oven for 15min. The tops of the potatoes will start to go crispy. Add the parmesan cheese and return to the oven for a further 5 min. Serve immediately.
