100g smoked bacon finely sliced
I handful of rosemary, leaves picked and roughly chopped
olive oil
1 large onion finely chopped
3 cloves of garlic finely chopped
500g lean mince
200ml red wine
1 level teaspoon dried oregano
1 tin of tomatoes
100g Sun Dried tomatoes, in olive oil
100g button mushrooms, sliced
Salt and pepper

Preheat the oven at 180°C. In a food processor blitz the sun dried tomatoes into a paste. In a large hot pan that can go in the oven, fry the bacon and rosemary until golden. Then add the onion and garlic and fry for a further 3 mins, until soften, before adding the mince meat. Stir continually before adding the wine. Reduce slightly before adding the oregano, the tinned tomatoes and the sun dried tomatoes.
Season well, bring to the boil, cover with greaseproof paper and place in the preheated oven for 1 hour. Remove from the oven and add the mushrooms. Stir them in, replace the lid and return to the oven for a further 30 min. Whilst this is cooking, heat up a large pan of water for the pasta and cook per packet instructions.
