Jamaican Cuisine – Callaloo Recipe

Callaloo is one of the Caribbean’s most famous dishes. The name of the dish comes from the leaves of the main ingredient – callaloo. If you can’t get hold of this use swish chard or spinach.

Serves: 6

225g callaloo leaves
110g fresh crab meat
110g salt pork, cut into cubes
1 onion
2 cloves garlic, crushed
110g Okra, sliced
½ tsp ground cloves
½ tsp ground cinnamon
1 fresh green chilli, chopped
240 ml coconut milk
juice of 1 lime
2 tbsp vegetable oil
Salt and pepper

Heat the oil in a large pan. Fry the salt pork for about 2 min and remove with a slotted spoon. Reserve to one side. Next add the onions to the pan and cook for 3-4 min before adding the garlic. Continue to sauté for a further 2 min. Next add the okra, cloves, cinnamon, chilli, coconut milk and lime juice and bring to the boil. Once it comes to a boil, reduce the heat to a simmer and let it cook for 30 min. Add the crabmeat and pork and cook for a further 10 min. Season with salt and pepper to taste and serve.
