Jamaican Cuisine – Caribbean Coconut Shrimp

2 lb uncooked shrimps in shells
Salt to taste
3 tbsp of olive oil
1 small onion, thinly sliced
1 clove garlic
2 tbsp curry powder
2 cups of coconut juice
1 cup pineapple juice
Pepper and paprika to taste
1 piece crushed ginger or 1/2 teaspoon ground ginger
2 carrots, thinly sliced
1 celery stalk, thinly sliced
2 tbsp lemon juice, zest
Hot cooked rice

Jamaican Cuisine   Caribbean Coconut Shrimp

Heat water with salt in a big pot. Add the shrimps and cook until they are pink. Heat olive oil and brown onion, garlic, brown curry powder in a pan with butter until the curry is deep brown. Add the coconut and the pineapple juice, seasonings and sliced vegetables. Cook on low temperature for about 15 min. Add the shrimps and lemon juice with zest. Serve with rice
