Jamaican Cuisine – Caribbean Jerk Pork Roast

Here is a great Caribbean approach to roast a pork loin.

Difficulty rating: Easy

Serves: 4

Ingredients:
3 lb Boneless Pork Loin
Seasoning:
1 tbsp Onion, Dried
1 tbsp Onion powder
2 tsp Thyme, chopped
2 tsp Salt
1 tsp Ground All Spice
1/2 tsp Ground Nutmeg
1/2 tsp Ground Cinnamon
2 tsp Sugar
1 tsp Black pepper
1 tsp Red pepper

Method:
Combine the seasoning ingredients in a pestle and mortar. Pat roast with paper towelling. Rub the seasoning evenly over the pork joint. Place in shallow pan and roast at 200C for 60-75 minutes.

Remove from oven, let rest for 10 minutes. Slice and serve. (or cool slightly, slice and wrap well to refrigerate.)
