Jamaican Cuisine – Sweet Potato Pudding

1 kg sweet potato (grated)
2 ½ cups coconut milk
½ tin evaporated milk
Pinch of salt
4 tbsp spoon vanilla extracts
1 tbsp cinnamon
1 tbsp nutmeg
1 ¾ cup brown sugar
¼ cup white rum
2 cups flour
1/3 cup butter melted

Jamaican Cuisine   Sweet Potato Pudding

Preheat the oven to 180C. Place the sweet potato in a mixing bowl and add flour, mix well. In another bowl mix the other ingredients listed and combine. Slowly combine liquid into dry ingredient. Pour batter into 8” baking tin and let stand for 10 minutes before placing it into the oven. Bake for 2 hours. Check with a skewer before removing from the oven and allowing to rest before turning it out on a cooling rack to cool.
