This Johnny Appleseed Meatball Recipe is really tasty, especially if you use a tart apple in it.

I’ve included a recipe for Dilled Apple Rice and Creamy Coleslaw that work perfectly to create a complete meal.

These meatballs can be made ahead and re-heated just before serving. Or, if you want to make a double batch, just freeze the leftovers for another time.

Johnny Appleseed Meatball Recipe

1 lb. ground beef
1/4 cup dried bread crumbs
3/4 cup peeled, finely diced apple
1 egg
1 tsp. onion salt
2 tbsp. Olive oil
1 cup apple juice
1 tbsp. brown sugar
1 package brown gravy mix

Method

In a large bowl combine first 5 ingredients. Form into meatballs. In a large frying pay heat the Olive oil. Brown meatballs in the oil until cooked to desired doneness. Remove meatballs from frying pan. Drain fat. Return meatballs to frying pan. In a small bowl, mix apple juice, brown sugar and gravy mix. Pour over meatballs. Bring to a boil. Simmer, stirring constantly for 3 to 4 minutes. Makes 4 servings.

This Johnny Appleseed Meatball Recipe is complimented nicely by Dilled Apple Rice and a Creamy Coleslaw Recipe. They both follow.

Dilled Apple Rice

1 1/2 cups rice
apple juice
1 1/2 tsp. dill weed
1/2 tsp. salt
1/4 tsp. pepper
2 green onions, thinly sliced

Method

Cook rice according to package directions but substitute the apple juice for the water. Add the dill, salt and pepper to the rice before cooking. When rice is cooked stir in the green onion. Makes 4 to 5 servings.


Serve this Johnny Appleseed Meatballs Recipe along with the rice recipe above. Add some creamy coleslaw and you’ve got a great meal.

Creamy Coleslaw

3 cups shredded cabbage
1 cup shredded carrot
1 cup diced apple
1/2 cup mayonnaise
1/4 cup lemon juice
2 tbsp. sugar
1 tbsp. prepared mustard
1 tsp. celery seed
1/2 tsp. salt

Method

In a large bowl, toss cabbage, carrots and apple. In a small bowl, combine the remaining ingredients. Pour over the cabbage mixture and toss to coat. Chill for 2 to 3 hours. Makes 6 to 8 servings.
