Miso soup is a very traditional Japanese soup consisting of a stock called “dashi” into which is mixed softened miso paste its usually served with tofu, scallion, wakame.

Miso soup do require dash which is a soup stock, you can make on your own by boiling water with dried kelp (seaweed) and dried bonito (fish).

It will take longer about 15-20 min for the stock, and than another 15 minutes when adding the miso paste or you can get the Instant dashi granules, which is very convenient and can be found in Japanese or Asian market it will short the time to about 15 min.

All you need is:

  • - 3 teaspoons dashi granules
  • - 4 cups water
  • - 3-4 tablespoons miso paste
  • - 1 package tofu, diced
  • - Green onions, sliced diagonally into 1/2 inch pieces

In a medium saucepan over medium-high heat, combine dashi granules and water; bring to a boil.

Reduce heat to medium, and whisk in the miso paste. Stir in tofu. Let it simmer gently for a 1-2 minutes before serving.
