1 tbsp olive oil
1 boneless, skinless chicken breast, cut into strips
1/4 cup scallions, chopped
1/4 cup green pepper, thinly sliced
1 clove garlic, minced
1 tbsp salsa
2 Adios Carbs Tortillas
1/4 cup shredded cheddar cheese

Low Carbohydrate Chicken Quesadilla Recipe

Preparing the chicken quesadilla:

1. In a large skillet heat 1/2 tablespoon of the olive oil. Add the chicken and saute until cooked through. Remove the chicken from the skillet and set aside.

2. Put the remaining 1/2 tablespoon of olive oil in the skillet and saute the scallion and green pepper until tender. Stir in the minced garlic and saute 3-4 more minutes. Mix in the salsa and cooked chicken, set the mixture aside and keep warm.

3. In a small skillet, heat one of the tortillas. Spread 1/2 the shredded chedder on the tortilla, top with the chicken mixture. Sprinkle with the remaining cheese and top with the other tortilla. Allow to cook for a minute or two and then flip and cook on the other side for another minute or two. Remove the quesadilla and cut into quarters. Serve with sour cream and additional salsa if so desired but remember to add on the extra carbs to the carb count.

Serves 2 with 8.65 carbs per serving
