Mexican Cuisine – Cajun Style Fish Recipe

We used Cod to make this recipe but any white fish will work, so feel free to experiment!

Serves: 2

Ingredients:
2 Large Cod Fillets
375ml Chopped Tomatoes
1/2 Green Sweet Pepper, sliced
2 Cloves Garlic, minced
1 Small Onion, sliced
2 tbsp Olive Oil
1/2 tsp Salt
1 pinch Cayenne Pepper
Milled Black Pepper

Method:
Heat the oil in a large frying pan and sauté garlic, sweet pepper and onion until soft and browned, remove from the heat and set aside. Add the fillets, to the pan sauté for 2 minutes, then turn. Return the sautéed vegetables to the pan adding the remaining ingredients, cover and reduce heat to low. Simmer for 15 minutes before serving.
