Mexican Cuisine – Chicken Fajitas Recipe

4 skinless chicken breasts, cut into thin strips
1 red onion, finely sliced into half moons
2 red chillies, finely sliced into rings (you decide whether to keep the seeds or not!)
Juice of 1 lime
2 oz fresh coriander, roughly chopped
3 cloves of garlic, thinly sliced
2 tbsp olive oil
2 oz cheese, grated, to serve
100g natural yoghurt, to serve
8 flour tortillas

Heat the oil in a large non stick pan or wok, when hot add the onion, cook for 2 min before adding the garlic and chilli. Cook for a further min before adding the chicken, pepper and lime juice. Stir well, cover and cook for 8 – 10 min or until the chicken is thoroughly cooked and tender. Mix through the coriander and serve with the yoghurt, cheese in the flour tortillas.
