Moist Banana Bread Recipe

Banana bread is one of the most popular dessert or coffee treats. Alone, toasted, with or without butter, banana bread “takes the cake”!

The smell alone can light up a kitchen with memories of childhood or romance. There are many varieties of banana breads – this one is chosen especially for moistness.


  • 3 medium ripe bananas, mashed
  • 175g unrefined soft brown sugar
  • 125g butter
  • 280g plain flour
  • 2 eggs
  • 1tsp bicarbonate of soda
  • Pinch of salt
  • 125ml milk
  • 1tsp vanilla extract
  • 75g walnuts, chopped

Moist Banana Bread Recipe

Preheat oven to 180C. Lightly oil a 10in x 4 1/2 in (25cm x 11 cm) loaf tin.

Mix butter and sugar in a food processor or with electric beaters until smooth. Add an egg and beat well, then add the second and continue to beat well.

Sift in half of the flour with the salt and bicarbonate of soda and mix well. Mix in the milk, then the remaining flour.

Mash bananas and then fold in to the mixture with the walnuts and vanilla extract. Then pour the mixture into the loaf tin and level the top with a spatula.

Bake for about an hour until a skewer inserted in the middle comes out clean. Cover the top with foil if it starts to brown too quickly.

Allow to cool in the tin for at least 20 minutes. To serve, cut into thick slices and serve warm or at room temperature.
