New Zealand Cuisine – Fish Fritters Recipe

Use which ever white fish you can get hold of. These make a great snack.

Serves: 4

Ingredient s:
125g white fish, cut into thin strips
100g flour
125g milk
1 egg
½ tsp baking powder
½ tsp salt
vegetable or sunflower oil for deep frying
1 lemon cut into wedges

Method:
Combine the flour, baking powder and salt in a bowl. Add the egg and then slowly add the milk until you have a batter mixture (you may not require all of the milk). Meanwhile enough oil in a pan to shallow fry the fish. Dip each piece of fish in the batter before placing it in the hot oil. Cook for 3-4 min until golden. Remove from the oil and drain on kitchen paper before serving with the lemon wedges.
