New Zealand Cuisine – Grilled Green Lip Mussels

Grilled mussels provide an alternative method of cooking mussels and are just as tasty. Experiment with different toppings!

Serves: 4

16 halved green lipped New Zealand Mussels
20g fresh coriander, roughly chopped
1 clove of garlic, roughly chopped
1 stalk of lemon grass, outer tough leaves removed and roughly chopped
1 red chilli, roughly chopped (remove the seeds if you want a milder flavour)
4 tbsp peanuts
4 tbsp coconut cream
1 tsp olive oil

To make the topping for the mussels, place the coriander, garlic, lemon juice, chilli, peanuts and coconut cream in a food processor and whiz until it forms a smooth paste. Heat the grill on high. Place the mussels on a grill pan, shell side down. Place a teaspoon of the paste on the top of each mussel. Place under the grill for 4 min to heat the mussel through, and serve with lime wedges as a starter.
